Cauliflower and Peanut Soup

A delicious soup. Not to worry if you don’t have all the ingredients, improvise a little (your version might be better!)


Ingredients

White Onion
A leek
3 – 4 sticks of celery
A small fennel
A tsp of tumeric
2 tsp of ground ginger
2 tsp of whole coriander
1 tsp of whole cumin
2 – 3 cloves of garlic
A whole red chilli
Half a dozen of small potatoes
1 litre of vegetable stock (for eg. bouillon)
A tin of coconut milk
250g of roasted peanuts
And a cauliflower

Procedure

Chop the onion, chilli, celery, fennel & leek and fry in a couple of
tablespoons of oil until soft. Add all the spices, giving everything a good old stir to let the spices infuse. Add the peanuts, mixing well, then the chopped up potatoes and stock. Bring to the boil and simmer on a low heat until the potatoes are cooked. Whizz with a blender until smooth, then add the coconut milk. Season accordingly.
