For about a dozen pancakes. Allow 25 mins to prepare including 20 mins to stand.

Ingredients
  

  • 125 g 100% wholewheat flour
  • 60 g soya flour
  • 1 tsp baking powder
  • 125 ml soya milk
  • 125 ml water
  • 45 ml oil
  • salt to taste

Instructions
 

  • Put flours, baking powder & salt to taste into a bowl and mix thoroughly
  • Add the milk a little at a time and then the water,
  • stirring continuously until the mixture becomes smooth & creamy. For fritters keep the mix fairly thick. For pancakes, make it thinner: the thinner the mix the lighter the pancakes
  • Beat in the oil a little at a time with a whisk, a fork or an electric mixer. Allow to stand for 20 minutes before use. Fry, flip & enjoy.

Notes

Serve with squeezed lemon and/or maple syrup.
