Drain the jackfruit, chop off the stems and remove the seeds. Rub the jackfruit between your hands until it breaks apart and becomes stringy.
Put to one side.
Fry off the onions and garlic in the olive oil for a few minutes until browned.
Add the smoked paprika and fry for a further minute or two.
Add the chopped tomatoes, puree, water, maple syrup and molasses and cook through for 15 minutes or so. Season with salt and pepper.
Add the jackfruit and cook on a low heat for 20 minutes.
Serve in wraps or rolls with coleslaw and salad
