Watercress Dressing


  • 1 bunch watercress
  • 1 red onion diced
  • 4 Tbsp olive oil
  • 2 Tbsp toasted sunflower seeds
  • 2 Tbsp lemon juice sea salt and freshly ground pepper


  • Place the watercress, red onion and oil in a blender, puree. Add seasoning to taste and stir in the toasted sunflower seeds just before serving.
