This is so easy, and never fails to impress.
- 1 Red pepper
- 1 Onion
- 1 Red chilli
- 1/2 bunch fresh coriander
- 1/2 bunch fresh parsley
- 2 dessert spoons sunflower oil
- 1 dessert spoon lemon juice
- 1/4 tube tomato puree
- pinch salt
- 1 tin of chickpeas
Finely chop red pepper, onion & chilli (according to taste).
Blend a handful of coriander / parsley with sunflower oil & mix with lemon juice, tomato purée & salt.
Mix everything together with a tin of chickpeas, garnish with fresh herbs and serve!
