Gazpacho is the perfect recipe for using up late summer produce.
Course Soup


  • 1/2 kg tomatoes cut into chunks
  • 1 cucumber peeled and chopped into chunks
  • 3 slices stale bread cubed
  • 1/4 cup olive oil
  • 2 tbsp sherry vinegar
  • 2 cloves garlic
  • salt and pepper


  • Combine all ingredients in a blender (except for salt & pepper). Process until smooth adding water if needed. Season with salt & pepper.
