Couscous is one of the quickest, easiest things you'll ever cook – just boil 1 ¼ parts liquid for 1 part couscous, pour it over the grain and let stand till fluffy. Use bulgur instead with a ratio of 2 (liquid) to 1 (grain).

Ingredients
  

  • 200 ml veg stock
  • 1 tsp cinnamon
  • 0.5 g ground coriander
  • 250 g couscous
  • 75 g raisins
  • 2 tomatoes chopped
  • ½ bunch each parsley & mint or herbs of choice, chopped
  • 1 garlic clove crushed
  • 4 Tbsp olive oil
  • salt & pepper
  • 200 ml orange juice

Instructions
 

  • Combine liquid, spices and ½ tsp salt and bring to a boil. Add couscous, remove from heat & cover for 10 minutes.
  • Mix together remaining ingredients, add couscous and season to taste. Serve warm or at room temperature.
