Banana Pancakes

This recipe is for one, so just multiply the quantities by the number of people. Enjoy topped with fruit and maple syrup or however you like.

Ingredients
  

  • 40 g plain flour
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 1 large very ripe banana mashed
  • 60 ml non dairy milk
  • Pinch of salt

Instructions
 

  • In a mixing bowl, mix together the dry ingredients. In another small bowl, mix together the mashed banana with the vanilla and non dairy milk. Add the wet mixture to the dry and mix together.
  • Heat a non stick frying pan with a little oil. Add a ladle of the mixture for each pancake. Cook the first side for a few minutes until the mixture dries and begins to bubble. Flip over and cook for another minute on the other side. Repeat until mixture is finished.
