This recipe is for one, so just multiply the quantities by the number of people. Enjoy topped with fruit and maple syrup or however you like.

Ingredients
40gplain flour
½tspbaking powder
1tspvanilla extract
1large very ripe bananamashed
60mlnon dairy milk
Pinchof salt
Instructions
In a mixing bowl, mix together the dry ingredients. In another small bowl, mix together the mashed banana with the vanilla and non dairy milk. Add the wet mixture to the dry and mix together.
Heat a non stick frying pan with a little oil. Add a ladle of the mixture for each pancake. Cook the first side for a few minutes until the mixture dries and begins to bubble. Flip over and cook for another minute on the other side. Repeat until mixture is finished.
