Beet Burgers

These taste great served in warm pitta bread with salad and Beetroot Tzatziki.

Ingredients
  

  • 240 g cooked rice
  • 190 g beetroot grated
  • 70 g oats
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 Tbsp almond butter
  • 2 tsp Dijon mustard
  • ½ tsp salt

Instructions
 

  • Blend all of the ingredients together in a food processor or simply mix together by hand.
  • Place the mixture into the fridge for 30 minutes to firm up.
  • Form the mixture into burger shapes. Heat a little oil in a frying pan and cook the burgers on each side until golden.
