Cauliflower & Peanut Soup

A delicious soup. Not to worry if you don’t have all the ingredients, improvise.
Course Soup

Ingredients
  

  • 1 onion
  • 1 leek
  • 3 to 4 sticks of celery
  • 1 small fennel
  • 1 tsp turmeric
  • 2 tsp ground ginger
  • 2 tsp whole coriander
  • 1 tsp whole cumin
  • 2 to 3 cloves of garlic
  • 1 red chilli whole
  • 6 small potatoes
  • 1 litre vegetable stock e.g. bouillon
  • A tin of coconut milk
  • 250 g of roasted peanuts
  • 1 cauliflower

Instructions
 

  • Chop the onion, chilli, celery, fennel & leek and fry in a couple of tablespoons of oil until soft. Add all the spices, giving everything a good old stir to let the spices infuse.
  • Add the peanuts, mixing well, then the chopped up potatoes and stock. Bring to the boil and simmer on a low heat until the potatoes are cooked. Whizz with a blender until smooth, then add the coconut milk. Season accordingly.
