A delicious soup. Not to worry if you don’t have all the ingredients, improvise.

Ingredients
1onion
1leek
3 to 4sticks of celery
1small fennel
1tspturmeric
2tspground ginger
2tspwhole coriander
1tspwhole cumin
2 to 3cloves of garlic
1red chilliwhole
6small potatoes
1litrevegetable stocke.g. bouillon
A tin of coconut milk
250gof roasted peanuts
1cauliflower
Instructions
Chop the onion, chilli, celery, fennel & leek and fry in a couple of tablespoons of oil until soft. Add all the spices, giving everything a good old stir to let the spices infuse.
Add the peanuts, mixing well, then the chopped up potatoes and stock. Bring to the boil and simmer on a low heat until the potatoes are cooked. Whizz with a blender until smooth, then add the coconut milk. Season accordingly.
