Now this is really quick to make...

Ingredients

  • 2 red onions
  • 2 celery sticks
  • Bunch parsley
  • Tin of mixed beans
  • 3 Tbsp olive oil
  • 1 Tbsp vinegar cider or balsamic or a mixture
  • Good pinch salt

Instructions

  • Finely shred red onions, celery sticks & parsley (without the stalks). Mix with beans.
  • Mix oil, vinegar and salt together and dress. Serve with a leafy salad
