This compliments the Cauliflower Koftas really nicely!

Ingredients
  

  • A couple of small red onions
  • A thumbnail of ginger
  • ½ chilli
  • 2 cloves of garlic
  • ½ tsp turmeric
  • ¼ tsp black onion seeds
  • 1 tsp cumin & coriander
  • 1 tin plum tomatoes

Instructions
 

  • Fry everything until soft, adding a tin of plum tomatoes and the same amount of cold water. Add a teaspoon of salt and cook for an hour, simmering and allowing the mixture to reduce.
  • Take off the heat and add ½ a block of creamed coconut. Stir it when back on the heat, whizzing it to make it smooth.
  • Add the juice of a lemon if required.
