Preheat your oven to 175C (155C fan). Whisk together the dry ingredients in a large bowl. In a small saucepan, gently heat the coconut oil and rice syrup until nice and runny, then stir through the vanilla. Add to the dry ingredients and stir through. Pick and choose any extras you’d like to add and mix well! Put 2 tbsp-dollops onto 2 lined baking sheets and bake for 14-16 minutes. Allow to cool slightly before moving to a wire rack. Enjoy!
