One-Pot Vegetable Couscous

A complete meal, fast and easy to make without lots of time over a hot stove - perfect for when you're short of time or it's too warm to cook! Feel free to adapt using veg you have in.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium red onion diced
  • 1 red or yellow pepper diced
  • 1 carrot diced
  • 2 garlic cloves minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 1 tin chickpeas drained and rinsed
  • 5 pickled red peppers chopped (optional)
  • 180 g couscous
  • 360 ml vegetable stock
  • handful parsley chopped
  • lemon juice and zest

Instructions

  • In medium-sized pot (with a lid you can use later), saute veg in oil over medium heat until starting to soften, approx 5 minutes. Add garlic and cook another minute. Stir in spices and cook another minute. Add pickled peppers and chickpeas, stir, and cook another minute. Add veg stock and bring to a boil, and remove from heat. Mix in couscous, flatten the top, cover and set 5-10 minute until liquid absorbed. Add lemon juice, zest, parsley and salt and pepper to taste. Fluff with a fork and serve with vegan sour cream or avocado if desired.
