Roasted Cauli and Lemon

You'll be shocked at how much cauliflower you'll want to eat once you've done this to it. Nice on its own as a side, or with rice and almonds as a complete meal. Don't leave out the cauli leaves! They are the most delicious bit. From HFW.

Ingredients

  • 1 cauliflower cut into medium florets
  • 2 lemons
  • 3 Tbsp olive oil
  • 1/2 tsp hot smoked paprika
  • Salt and pepper to taste
  • 2-3 handfuls toasted almonds roughly chopped (optional)

Instructions

  • Heat oven to 220C.
  • Rinse cauli, leaving some water clinging on. Add to large roasting tray. Add juice of one lemon, olive oil, paprika and salt and pepper and mix.
  • Scatter over second lemon, chopped into 6 segments.
  • Roast 25-30 min, turning halfway through. It’s done when florets are tender and start caramelising at the edges.
  • Squeeze roasted lemon wedges over the cauli, and add a bit more salt. Tip into a serving bowl with all its juices and enjoy.
