Roasted Cauli and Lemon
You'll be shocked at how much cauliflower you'll want to eat once you've done this to it. Nice on its own as a side, or with rice and almonds as a complete meal. Don't leave out the cauli leaves! They are the most delicious bit. From HFW.

Ingredients

cauliflower
cut into medium florets
2
lemons
3
Tbsp
olive oil
1/2
tsp
hot smoked paprika
Salt and pepper to taste
2-3
handfuls
toasted almonds
roughly chopped (optional)
Instructions
Heat oven to 220C.
Rinse cauli, leaving some water clinging on. Add to large roasting tray. Add juice of one lemon, olive oil, paprika and salt and pepper and mix.
Scatter over second lemon, chopped into 6 segments.
Roast 25-30 min, turning halfway through. It’s done when florets are tender and start caramelising at the edges.
Squeeze roasted lemon wedges over the cauli, and add a bit more salt. Tip into a serving bowl with all its juices and enjoy.
