A spicy green maftoul salad recipe celebrates the nutty maftoul pearls with sharp, lemony, herby flavours. Adapted from chef Sami Tamimi via Zaytoun.uk. Serves 4 as a side.

Ingredients
200gmaftoul
350mlboiling water or vegetable stock
4spring onionsfinely sliced (120g)
1tbspolive oil
60gpistachiostoasted and roughly chopped
¼tspchilli flakes
1½tspblack onion seedsa.k.a. nigella seeds
1fresh green chillithinly sliced
50gkaleshredded (or lamb’s lettuce)
Salt and pepper
Dressing
50gdill
50gmint
20gparsley
20gcoriander
1tspcumin
2tbsplemon juice
100mlolive oil
Instructions
Rinse maftoul and place in saucepan with water or stock. Bring to boil and simmer ~12 min. Take off heat, cover and stand 10min to absorb. Meanwhile, saute the onions in olive oil 2-3 minutes to soften. Let cool.
Blitz dressing ingredients to a smooth paste.
Stir the dressing into the maftoul, then add the onions, nuts, spices, chilli, ¾ tsp salt and a good grind of black pepper. Add the kale and gently combine before serving.
