A decadent gluten-free dessert. No-bake and simple to make.

Ingredients
Base
1cuppitted soft dates
2cupsraw walnuts
1/2tspcinnamon
1/4tspcardamom
Half vanilla pod
Pinchof salt
Filling
4cupscashewssoaked overnight
2/3cupscoconut oil melted
1/2cupsmaple syrup
1/4cupcoconut cream
2vanilla pods
Instructions
Blend all base ingredients in a food processor
Press the pie dough in a 9-inch springform pan
Place it into the refrigerator until the filling is ready
Rinse the food processor and blend all the filling ingredients
When the filling is smooth, take you springform pan out of the fridge and fill. Smooth the top as much as you can, cover it with foil and place it in the freezer for at least 6 hours.
Transfer to the fridge until are ready to eat it.
Serve topped with fresh fruit or compote if desired. Enjoy!
