Ingredients

  • 75 g cooked rhubarb & a thumb of chopped ginger
  • 1 Tbsp natural sweetener
  • ice cubes to serve & extra cooked rhubarb to garnish
  • 150 g vanilla ice cream

Instructions

  • Place the cooked rhubarb, ginger, syrup and ice cream in the blender and blend until smooth. Pour into a glass over ice and garnish with extra rhubarb
