For a delicious breakfast, make your own corn tortillas! See the Masa Harina packet for instructions. Or get some ready made from our chiller and saute them in a bit of oil just before serving. Adapted from my childhood friend's Honduran mother.
Course Breakfast

Ingredients
  

  • Corn tortillas
  • Olive oil
  • Tin of black beans
  • 1 clove garlic minced
  • Small block of tofu smoked if desired
  • Pinch Chilli powder
  • 1/2 - 1 tsp cumin
  • Avocado chopped
  • Salt & pepper

Instructions
 

  • Saute garlic and add black beans with a bit of their juice. Warm up and season to taste.
    Fry tofu in a glug of oil until it's starts to crisp up in places , breaking up with a wooden spatula for the scrambled egg look. Season with cumin, chilli powder, salt and pepper.
    Eat altogether with the salted avocado! Delicious.
