For a delicious breakfast, make your own corn tortillas! See the Masa Harina packet for instructions. Or get some ready made from our chiller and saute them in a bit of oil just before serving. Adapted from my childhood friend's Honduran mother.
- Corn tortillas
- Olive oil
- Tin of black beans
- 1 clove garlic minced
- Small block of tofu smoked if desired
- Pinch Chilli powder
- 1/2 - 1 tsp cumin
- Avocado chopped
- Salt & pepper
- Saute garlic and add black beans with a bit of their juice. Warm up and season to taste. Fry tofu in a glug of oil until it's starts to crisp up in places , breaking up with a wooden spatula for the scrambled egg look. Season with cumin, chilli powder, salt and pepper. Eat altogether with the salted avocado! Delicious.
