A super quick and easy recipe which can be eaten with salad for lunch, a side dish or tapa, or wrapped up in a lovely Italian Flat Bread (find the recipe using Recipe Search button to the right!)

Ingredients
  

  • 1 tbsp olive oil
  • 4 garlic cloves crushed
  • 400 g tin chopped tomato
  • 2 x 400g tins butter beans rinsed and drained
  • Small bunch basil chopped

Instructions
 

  • Heat the oil in a medium saucepan. Fry the garlic for 1 min, then add the tomatoes, and some seasoning.
  • Tip in the beans and a splash of water. Cover and simmer for 5 mins, then stir in the basil and serve.
