A super quick and easy recipe which can be eaten with salad for lunch, a side dish or tapa, or wrapped up in a lovely Italian Flat Bread (find the recipe using Recipe Search button to the right!)
- 1 tbsp olive oil
- 4 garlic cloves crushed
- 400 g tin chopped tomato
- 2 x 400g tins butter beans rinsed and drained
- Small bunch basil chopped
- Heat the oil in a medium saucepan. Fry the garlic for 1 min, then add the tomatoes, and some seasoning.
- Tip in the beans and a splash of water. Cover and simmer for 5 mins, then stir in the basil and serve.
