Vanilla Ice Cream

Another dessert based on that most versatile and creamy of nuts. Nothing complicated or weird – just soak and blend!

Ingredients

  • 1 cup cashews soaked overnight
  • 1 vanilla pod
  • 1 cup maple syrup
  • 1 cup soy or any non-dairy milk
  • Pinch of salt

Topping ideas:

  • Walnuts pistachio or pecan nuts, toasted and chopped
  • Date syrup
  • Fresh fruit
  • Crumbled biscuits

Instructions

  • Scrape out the vanilla pod and add with other ingredients to a high-speed blender. Blend until very smooth.
  • Freeze for at least 2-3 hours, add any desired toppings and enjoy!

Notes

Variations: Tweak this recipe however you like, adding a bit of cocoa powder instead of vanilla, some fresh fruit, nut butter, instant coffee.
