Vanilla Ice Cream
Another dessert based on that most versatile and creamy of nuts. Nothing complicated or weird – just soak and blend!
Ingredients
- 1 cup cashews soaked overnight
- 1 vanilla pod
- 1 cup maple syrup
- 1 cup soy or any non-dairy milk
- Pinch of salt
Topping ideas:
- Walnuts pistachio or pecan nuts, toasted and chopped
- Date syrup
- Fresh fruit
- Crumbled biscuits
Instructions
- Scrape out the vanilla pod and add with other ingredients to a high-speed blender. Blend until very smooth.
- Freeze for at least 2-3 hours, add any desired toppings and enjoy!
Notes
Variations: Tweak this recipe however you like, adding a bit of cocoa powder instead of vanilla, some fresh fruit, nut butter, instant coffee.
