400g split fava beans, rinsed
1 tbsp olive oil
1 onion, chopped
3 cloves of garlic, finely chopped
2 leeks, sliced
1 tbsp finely chopped fresh rosemary leaves, chopped
2 litres vegetable stock
salt and fresh ground black pepper to taste
Wash the split fava beans and put into a large saucepan. Cover with water and bring to the boil and boil for 10 minutes, removing any scum which forms on the surface. Drain.
Meanwhile, heat the oil in a large saucepan and add the onions and leeks. Cook gently until they soften, approx 10 minutes. Stir in the garlic and leave for a minute.
Add the drained beans, rosemary and vegetable stock, replace the lid and leave to simmer for 30 minutes. Remove from the heat and blend until smooth. Add salt and pepper to taste.
