- 1 bunch watercress
- 1 red onion diced
- 4 Tbsp olive oil
- 2 Tbsp toasted sunflower seeds
- 2 Tbsp lemon juice sea salt and freshly ground pepper
- Place the watercress, red onion and oil in a blender, puree. Add seasoning to taste and stir in the toasted sunflower seeds just before serving.
