Roasted Cauli and Lemon
You'll be shocked at how much cauliflower you'll want to eat once you've done this to it. Nice on its own as a side, or with rice and almonds as a complete meal. Don't leave out the cauli leaves! They are the most delicious bit. From HFW.
Ingredients
- 1 cauliflower cut into medium florets
- 2 lemons
- 3 Tbsp olive oil
- 1/2 tsp hot smoked paprika
- Salt and pepper to taste
- 2-3 handfuls toasted almonds roughly chopped (optional)
Instructions
- Heat oven to 220C.
- Rinse cauli, leaving some water clinging on. Add to large roasting tray. Add juice of one lemon, olive oil, paprika and salt and pepper and mix.
- Scatter over second lemon, chopped into 6 segments.
- Roast 25-30 min, turning halfway through. It’s done when florets are tender and start caramelising at the edges.
- Squeeze roasted lemon wedges over the cauli, and add a bit more salt. Tip into a serving bowl with all its juices and enjoy.
