One-Pot Vegetable Couscous
A complete meal, fast and easy to make without lots of time over a hot stove - perfect for when you're short of time or it's too warm to cook! Feel free to adapt using veg you have in.
Ingredients
- 1 tablespoon olive oil
- 1 medium red onion diced
- 1 red or yellow pepper diced
- 1 carrot diced
- 2 garlic cloves minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- 1 tin chickpeas drained and rinsed
- 5 pickled red peppers chopped (optional)
- 180 g couscous
- 360 ml vegetable stock
- handful parsley chopped
- lemon juice and zest
Instructions
- In medium-sized pot (with a lid you can use later), saute veg in oil over medium heat until starting to soften, approx 5 minutes. Add garlic and cook another minute. Stir in spices and cook another minute. Add pickled peppers and chickpeas, stir, and cook another minute. Add veg stock and bring to a boil, and remove from heat. Mix in couscous, flatten the top, cover and set 5-10 minute until liquid absorbed. Add lemon juice, zest, parsley and salt and pepper to taste. Fluff with a fork and serve with vegan sour cream or avocado if desired.
